Spaghetti Bolognese

Ingredients

  1. 12 ounces spaghetti
  2. 1 pound ground beef (or half beef and half pork)
  3. 2 tablespoons olive oil
  4. 1 medium onion, diced
  5. 2 cloves garlic, minced
  6. 1 medium carrot, finely diced
  7. 1 celery stalk, finely diced
  8. 1 can crushed tomatoes, 28 ounces
  9. 2 tablespoons tomato paste
  10. 1 teaspoon dried oregano
  11. 1 teaspoon dried basil
  12. 1 teaspoon salt
  13. 1 half teaspoon black pepper
  14. Half cup milk
  15. Parmesan cheese for serving

Directions

  1. Cook the spaghetti according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add onion, garlic, carrot, and celery. Cook 5 minutes until soft.
  3. Add the ground meat. Cook until browned, breaking it apart with a spoon.
  4. Stir in tomato paste, crushed tomatoes, oregano, basil, salt, and pepper. Bring to a simmer.
  5. Lower the heat and simmer gently for 25 to 30 minutes. Stir now and then.
  6. Pour in the milk, stir, and simmer 5 more minutes.
  7. Spoon the sauce over spaghetti. Top with Parmesan.

Tips

  1. A splash of red wine adds more depth to the sauce.
  2. This sauce tastes even better the next day, so you can make ahead.
