Ingredients
- 2 salmon fillets
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 clove garlic, minced
- Half lemon, cut in wedges
- 1 pound baby potatoes, boiled until tender
- 2 cups broccoli florets, steamed
- Salt and black pepper to taste
- Chopped parsley for garnish
Directions
- Pat salmon fillets dry and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Place salmon skin side down and cook 4 minutes until crisp. Flip and cook 3 minutes more.
- Add butter and garlic to the pan. Spoon over the salmon as it finishes cooking.
- Boil potatoes until tender, about 15 minutes. Drain, toss with butter, salt, and parsley.
- Steam broccoli for 5 minutes until bright green and tender.
- Serve salmon with potatoes and broccoli. Garnish with parsley and a squeeze of lemon.
Tips
- Do not move the salmon while searing to get a crisp skin.
- Use dill or thyme for added flavor.
- Swap broccoli for green beans or asparagus if preferred.
