Pan-Seared Salmon with Potatoes and Broccoli

Ingredients

  1. 2 salmon fillets
  2. 1 tablespoon olive oil
  3. 1 tablespoon butter
  4. 1 clove garlic, minced
  5. Half lemon, cut in wedges
  6. 1 pound baby potatoes, boiled until tender
  7. 2 cups broccoli florets, steamed
  8. Salt and black pepper to taste
  9. Chopped parsley for garnish

Directions

  1. Pat salmon fillets dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Place salmon skin side down and cook 4 minutes until crisp. Flip and cook 3 minutes more.
  3. Add butter and garlic to the pan. Spoon over the salmon as it finishes cooking.
  4. Boil potatoes until tender, about 15 minutes. Drain, toss with butter, salt, and parsley.
  5. Steam broccoli for 5 minutes until bright green and tender.
  6. Serve salmon with potatoes and broccoli. Garnish with parsley and a squeeze of lemon.

Tips

  1. Do not move the salmon while searing to get a crisp skin.
  2. Use dill or thyme for added flavor.
  3. Swap broccoli for green beans or asparagus if preferred.
