Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups egg noodles
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and black pepper to taste
- Fresh parsley for garnish
Directions
- Heat olive oil in a large pot. Add onion, carrots, celery, and garlic. Cook until softened, about 5 minutes.
- Pour in chicken broth, add thyme and bay leaf, and bring to a boil.
- Stir in noodles and cook until tender, about 8 minutes.
- Add shredded chicken and simmer for 5 minutes more.
- Season with salt and pepper. Remove bay leaf.
- Garnish with parsley and serve hot.
