Classic Chicken Noodle Soup

Ingredients

  1. 1 tablespoon olive oil
  2. 1 onion, diced
  3. 2 carrots, sliced
  4. 2 celery stalks, sliced
  5. 2 cloves garlic, minced
  6. 8 cups chicken broth
  7. 2 cups cooked chicken, shredded
  8. 2 cups egg noodles
  9. 1 teaspoon dried thyme
  10. 1 bay leaf
  11. Salt and black pepper to taste
  12. Fresh parsley for garnish

Directions

  1. Heat olive oil in a large pot. Add onion, carrots, celery, and garlic. Cook until softened, about 5 minutes.
  2. Pour in chicken broth, add thyme and bay leaf, and bring to a boil.
  3. Stir in noodles and cook until tender, about 8 minutes.
  4. Add shredded chicken and simmer for 5 minutes more.
  5. Season with salt and pepper. Remove bay leaf.
  6. Garnish with parsley and serve hot.

Tips

  1. Use rotisserie chicken for quick prep.
  2. Add a squeeze of lemon juice before serving for brightness.
  3. Soup freezes well — just cook noodles fresh when reheating.
