Ingredients

For the chicken:

  • 4 boneless, skinless chicken breasts (pounded to even thickness)

Instructions

  1. Prepare the chicken
    Start by pounding the chicken breasts to about ½-inch thickness. This ensures even cooking. Season both sides with salt and pepper.
  2. Bread the chicken
    Place flour in one shallow dish, beaten eggs in another, and breadcrumbs mixed with Parmesan, garlic powder, and Italian seasoning in a third. Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly in the breadcrumb mixture. Press firmly to make sure the coating sticks.
  3. Pan-fry the cutlets
    Heat olive oil in a large skillet over medium-high heat. Fry the breaded chicken breasts for 3–4 minutes per side until golden brown and crispy. Transfer to a paper towel–lined plate to drain.
  4. Assemble the dish
    Preheat oven to 375°F (190°C). In a baking dish, spread a thin layer of marinara sauce. Place the chicken cutlets on top, then spoon additional marinara over each cutlet. Layer mozzarella cheese and sprinkle Parmesan on top.
  5. Bake until bubbly
    Place the dish in the oven and bake for 20–25 minutes, until the cheese is melted, bubbly, and slightly golden at the edges.
  6. Garnish and serve
    Remove from the oven, let rest for a few minutes, then garnish with fresh basil leaves. Serve immediately.
