Classic Beef Lasagna with Rich Tomato Sauce

  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 can (15 oz) tomato sauce
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp sugar (to balance acidity)
  • Salt and pepper to taste

For the cheese mixture:

  • 15 oz ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Other ingredients:

  • 12 lasagna noodles
  • 3 cups shredded mozzarella cheese
  • Extra Parmesan for topping

Instructions

  1. Cook the sauce
    Heat olive oil in a large skillet or saucepan over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in garlic and cook for 1 more minute. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed. Stir in crushed tomatoes, tomato paste, and tomato sauce. Season with basil, oregano, sugar, salt, pepper, and red pepper flakes if using. Reduce heat and let the sauce simmer gently for 20–25 minutes, stirring occasionally, until thickened and flavorful.
  2. Prepare the cheese mixture
    In a medium bowl, combine ricotta, egg, Parmesan, and parsley. Mix until smooth and creamy. This mixture will help bind the layers of the lasagna together.
  3. Cook the noodles
    Bring a large pot of salted water to a boil. Cook the lasagna noodles until just al dente, about 1–2 minutes less than package instructions. Drain and lay them flat on a lightly oiled baking sheet to prevent sticking.
  4. Assemble the lasagna
    Preheat oven to 375°F (190°C). In a 9×13-inch baking dish, spread a thin layer of meat sauce on the bottom. Add a layer of noodles, followed by a layer of the ricotta mixture, a handful of mozzarella, and more meat sauce. Repeat the layers — noodles, ricotta, mozzarella, sauce — until the dish is nearly full. Finish with a final layer of noodles topped with the remaining sauce and a generous amount of mozzarella and Parmesan.
  5. Bake
    Cover the dish with foil (tent it slightly so it doesn’t stick to the cheese) and bake for 25 minutes. Remove the foil and bake for another 20 minutes, until the cheese is golden and bubbling.
  6. Rest before serving
    Let the lasagna rest for at least 10–15 minutes before slicing. This step is crucial, as it allows the layers to set and makes serving much easier.

Lasagna is a complete meal on its own, but it shines even more when paired with garlic bread and a fresh salad. For gatherings, add a side of roasted vegetables or a bowl of minestrone soup. It reheats well and tastes even better the next day after the flavors have melded together.
