Ingredients
- 2 bags fresh spinach (about 16 oz), chopped
- 2 tablespoons butter
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup ricotta cheese
- 1 cup shredded mozzarella
- Half cup grated Parmesan
- 2 eggs, beaten
- Half teaspoon salt
- Quarter teaspoon black pepper
Directions
- Preheat oven to 375 F. Lightly grease a casserole dish.
- In a skillet, melt butter and cook onion and garlic until soft. Add spinach and cook until wilted. Drain excess liquid.
- In a bowl mix ricotta, half of the mozzarella, Parmesan, eggs, salt, and pepper. Stir in the spinach mixture.
- Spread evenly into the casserole dish. Sprinkle remaining mozzarella on top.
- Bake 25 to 30 minutes, until bubbly and golden.
- Let sit 5 minutes before serving.
